Try FL Studio (it’s PC only). There’s a free demo: http://flstudio.image-line.com/documents/download.html

You can create your own melodies with the piano roll using your PC’s keyboard, "painting" in the notes, or recording from a midi keyboard. If you need help getting started with it, press F1 while it’s open or visit a site like youtube

Others may have a different opinion and I haven’t tried all of them but Audacity’s done everything I’ve needed to do.
